Term 4 Lunch Box Guide: Warm Lunches to Get You to the Finish Line

Does your kid's lunch box come home with the sandwich still in it? Not a bite missing? Just a slightly squashed, very rejected ham and cheese, and a shrug when you ask why?

By Term 4, most of us have packed the same handful of lunches on repeat for the better part of a year, and the kids have definitely noticed. Add warmer days, sports carnivals, excursions and end-of-year concerts to the mix, and everyone's running on fumes.

The good news? Shaking things up doesn't mean starting from scratch. Some of the easiest lunch box wins come straight from last night's dinner. 

Here are four family dinners that are the perfect leftovers to pack.

A warm lunch feels different. It's something to look forward to, and when lunch is exciting, it's far more likely to actually get eaten.

Before You Start: Getting the Most From Your Food Jar

A few small habits make a big difference to how warm lunch stays by the time the bell rings:

  • Pre-heat first. Fill your Food Jar with boiling water, pop the lid on and leave it for 5 to 10 minutes. Tip the water out just before you add the food.
  • Pack it piping hot. Heat food until it's steaming, then transfer it straight into the jar.
  • Fill it up. A full jar holds its temperature better than a half-empty one.

1. Nachos

Prep time: 5 minutes | Cook time: 10 minutes | Serves: 3 to 4Build-your-own nachos at school? This one's a guaranteed crowd-pleaser. Keep the warm mince in the Food Jar and the toppings separate, so they can put it all together themselves at lunchtime.

Ingredients:
  • 250g beef mince (or your preferred mince)
  • 1 can of corn, drained
  • Mingle Taco Seasoning
  • Olive oil or cooking oil
  • Corn chips
  • Grated cheese
  • Salsa
  • Sour cream
Mince Mix:
  1. Heat a pan over medium heat and add a small amount of oil.
  2. Add the mince and taco seasoning. Cook until the mince is browned, stirring to coat it evenly in the seasoning.
  3. Add the corn and cook for another 3 minutes, stirring occasionally.

Packing Your Lunch Box:

  1. Add corn chips and grated cheese to the compartments of your lunch box.
  2. Spoon the salsa and sour cream into Silicone Sauce Tubs to keep them contained.

2. Penne Carbonara

Prep time: 5 minutes | Cook time: 15 minutes | Serves: 3 to 4

Creamy, cheesy and full of crispy bacon, this is comfort food that travels beautifully. It's a great one to make for dinner and set aside a portion for tomorrow.

Ingredients

  • 250g penne pasta
  • 150g bacon or pancetta, diced
  • 3 egg yolks and 1 whole egg
  • ½ cup (50g) grated Parmesan cheese (or Pecorino)
  • 1 to 2 cloves garlic, finely chopped (optional)
  • Black pepper, to taste
  • Salt, for the pasta water
  • ½ cup pasta cooking water (save this before draining)

Method

  1. Cook the penne in a pot of salted boiling water until al dente. Before draining, save ½ cup of the pasta water.
  2. In a bowl, mix the egg yolks, egg, Parmesan and black pepper to make the sauce.
  3. Cook the bacon in a pan over medium heat until crispy. Add the garlic, if using, and cook for another 30 seconds.
  4. Add the cooked pasta to the pan with the bacon and turn off the heat. Stir through the egg mixture, adding a little pasta water at a time until the sauce turns smooth and creamy.

Packing Your Lunch Box

  1. Reheat until steaming hot, then spoon the carbonara into your pre-heated Food Jar.

3. Dumplings

Prep time: 25 minutes | Cook time: 10 minutes | Makes: approx. 25 to 30 dumplings

Homemade dumplings are a fun weekend cook-up with the kids, and they freeze well too. Make a big batch and you've got lunches lined up for weeks.

Ingredients

  • 1 packet dumpling wrappers
  • 250g pork mince (or mince of choice)
  • 1 cup finely chopped cabbage
  • 2 spring onions, sliced
  • 1 garlic clove, minced
  • 1 tsp grated ginger (optional)
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • Cooking oil
  • Water, for steaming

Method

  1. Mix the mince, cabbage, spring onion, garlic, ginger, soy sauce and sesame oil together in a bowl until combined.
  2. Place a dumpling wrapper on a flat surface and add a small spoonful of filling to the centre. Wet the edges with water, fold the wrapper over and press to seal. Repeat until all the filling is used.
  3. Heat a little oil in a pan over medium heat. Add the dumplings and cook until the bottoms are golden.
  4. Add a splash of water, cover with a lid and steam for 5 to 7 minutes until cooked through.

Packing Your Lunch Box

  1. Add the hot dumplings to your pre-heated Food Jar.
  2. Pour soy sauce or sweet chilli sauce into a Silicone Sauce Tub for dipping.

4. Creamy Tomato Pasta

Prep time: 5 minutes | Cook time: 15 minutes | Serves: 3 to 4

Simple, cosy and loved by even the fussiest eaters. This one comes together in the time it takes the pasta to cook.

Ingredients

  • 250g pasta (rigatoni, penne or pasta of choice)
  • 1 tbsp olive oil or cooking oil
  • 2 cloves garlic, minced
  • 1 cup tomato passata or pasta sauce
  • ½ cup cooking cream
  • ½ cup grated cheese (Parmesan or mozzarella)
  • Salt and pepper, to taste
  • Fresh basil or parsley (optional)

Method

  1. Cook the pasta in salted boiling water until tender. Save a little pasta water before draining.
  2. Heat the oil in a pan over medium heat and cook the garlic for 30 seconds until fragrant.
  3. Add the passata and cook for 5 minutes. Stir through the cream and grated cheese until the sauce is smooth and creamy.
  4. Add the cooked pasta to the sauce and mix well, adding a splash of pasta water if needed to loosen it.
  5. Top with extra cheese and herbs before serving.
