Puff Pastry Mini Quiches Recipe

Prep time: 15 minutes
Cook time: 18 to 20 minutes
Makes: 6 mini quiches (one tray)
What You'll Need

1 carrot, grated

1 zucchini, grated

1 small onion, finely diced

½ cup grated cheese

½ cup diced bacon

6 eggs

2 sheets puff pastry, slightly thawed
You'll also need an oven-safe silicone tray. You can use our Feast Tray, which gives you neat little rectangle quiches that fit perfectly in the lunchbox.
Method
1. Prep your oven and tin - Preheat your oven to 200°C (180°C fan-forced) and lightly grease a 12-hole muffin tin.
2. Line with pastry - Cut each puff pastry sheet into 6 squares (or use a round cutter) and gently press them into the muffin holes. Don't worry if the edges look a bit rustic. That's part of the charm.
3. Mix your filling - In a large bowl, whisk the eggs. Stir through the grated carrot, zucchini, onion, bacon and cheese until everything's well combined.
4. Fill and bake - Spoon the mixture evenly into the pastry cases, filling each about three-quarters full. Bake for 18 to 20 minutes, or until the pastry is puffed and golden and the egg is set in the middle.
5. Cool and enjoy - Let them rest in the tin for 5 minutes before lifting out. Enjoy warm, or cool completely before packing or freezing.

Make Them Your Own
The best part about this recipe is how easy it is to switch up. Simply add your favourite fillings and use what you've got on hand. A few family favourites:

Veggie lovers: Leave out the bacon and add baby spinach, corn kernels or finely chopped capsicum.

Ham and cheese: Swap the bacon for diced ham. A classic for a reason.

Pizza-inspired: Add a little tomato paste to the base, then top with diced ham, pineapple and extra cheese.

Leftover roast: Shredded chicken or roast veggies from last night's dinner work a treat.

How to Freeze Mini Quiches
This is where these little bites really earn their keep. A batch in the freezer means one less thing to think about on busy school mornings.
To freeze: Let the quiches cool completely. Pop them on a tray in the freezer for an hour so they don't stick together, then transfer to an airtight container or freezer bag. They'll keep for up to 2 months.
To reheat: Warm from frozen in the oven at 180°C for 10 to 12 minutes to bring back that flaky pastry. Short on time? The microwave works too, around 30 to 60 seconds, though the pastry will be a little softer.
Straight to the lunchbox: You can also pack them frozen in the morning. They'll thaw by lunchtime and help keep the rest of the lunchbox cool along the way.
