Lunch Box Recipe: Nut Free Apricot Bliss Balls

Everyone loves a bliss ball, especially ones that are nut free! These Apricot and Coconut Bliss Balls are tasty and easy to make. All you need is four ingredients and a blender!

These are nut free bliss balls, which means they're perfect for school lunches.

INGREDIENTS:

1 cup dried apricots
3 cups desiccated coconut
+ extra 1/2 cup for rolling
2 tbsp coconut oil
Makes 10-12 balls

METHOD: 

  1. Add dried apricots to a food processor (if they are a little hard, you can always soak them in warm water for 30 minutes first to make them soft and squishy!), along with the desiccated coconut and blend for 1 minute on high
  2. Pause to give the mixture a stir and spoon in 2 tbsp coconut oil before blending again for another minute. The mix should now easily stick together between your thumb and fingers.
  3. Roll the mixture into even sized balls and roll half of the batch in extra desiccated coconut, for a cool contrast. Refrigerate and store for 7 days in the fridge, or pop them in the freezer and add to your bentos whenever you need them. Too easy!
